BACON AND SWEET POTATO SLICES


These Sweet Potato Slices and Bacon have remained a long-running crowd pleaser over the hundreds of game day recipes we have made over the years. There are a few basic ingredients and spices in the recipe that, though delicious separately, were really intended to be together all along: bacon and sweet potatoes.



 

Ingredients

(1) 1 sweet potato (shredded)
(2) 1 zucchini (shredded)
(3) 4 rashers of bacon (shredded)
(4) 1 onion (shredded)
(5) Four eggs
(6) 1 cup of self-elevating flour
(7) 1 cup of cheese
(8) 1 Tablespoon of Garlic
(9) 1 Tablespoon Chives
(10) 1/2 teaspoon sea salt
(11) 1 teaspoon pepper (to taste)
(12) 1 teaspoon cilantro




 This basic bacon and sweet potato appetizer is allergy-friendly, in addition to being
ridiculously yummy and addictive, making it a good option for parties where guests have
distinct dietary restrictions. It is gluten-free, dairy-free, egg-free, and so is Paleo.

 You may also skip the bacon or top only a couple of the bites if you have a visitor who is
vegetarian or vegan. Or make some Smooth Vegan Queso Dip for them.
 Get Ahead Tips- Slice the sweet potatoes up to 1 day in advance and bake the bacon.
Store individually in the refrigerator in airtight containers.We recommend baking the
sweet potatoes and assembling the bites as close as possible to serving time, because
as they rest, they become a little soggy. They will still be delicious even if they do soften
slightly!


 To Store- To prevent browning, store in the refrigerator with plastic wrap pressed tightly
against the top.
 The beauty of this recipe is that in the veggie crisper, you can put in everything you
have.

 

Preparing Procedure

(1) Preheat the oven to 400°F. Line with foil on a wide, rimmed baking sheet. On top of the
foil, set up an oven-safe rack. Many cooling racks are oven-safe as well and can even
double for baking.

(2) Take a bowl and mix all the ingredients in it. Marinate for about 10 to 20 minutes.

(3) For an additional layer of protection to prevent the bacon and sweet potato from sticking,
coat the rack with non-stick spray. Arrange a single layer with the slicesand bake for 40
to 50 minutes.



(5) For a fast lunch or as a side to meats and roasts, serve with a salad.

(4) Remove to a plate lined with a paper towel and gently pat dry. Dice and set aside until
cool enough to treat.

Tips for Salad

 Meanwhile, mix the avocado, lime juice, the remaining 1/4 of a teaspoon of salt, and
smoked paprika in a small cup. With a fork, mash gently, leaving the mixture
somewhat chunky. Set aside.

(6) To a serving tray, transfer the baked sweet potato slices. Top each with a dollop of
avocado mixture, minced bacon, and cilantro for taste. Serve at room temperature or
hotter.
