Ingredients required for Keto Carb Free Enchiladas:
6 large eggs
¼ cup heavy whipping cream
½ teaspoon salt
Half teaspoon garlic powder
½ teaspoon chilli powder
¼ teaspoon black pepper
Enchiladas Carb Free Enchiladas
8 ounces ground sausage
¾ cup enchilada sauce
1½ cups shredded cheddar cheese
How to prepare Keto Southern Enchiladas:
1 Take a small skillet over medium-high heat and preheat your oven to 400F.
2 Take a large bowl and add beaten eggs, heavy whipping cream, salt, garlic powder, chilli powder, and black pepper and mix well till well combined.
3 Then, grease the skillet with coconut oil, pour ¼ cup portions of batter into the pan, and cover it with a lid.
4 Cook well from each side for around 2 to 3 minutes.
5 Do the same process with the remaining batter.
6 Then cook the ground sausage well and set it aside.
7 In the tortilla add sausage and portions of cubes and then roll them up and place into the casserole dish.
8 And then spread the Enchiladas sauce on top and make sure to cover all the eggs.
9 Then top with extra cheese and bake it for 10 to 15 minutes.
10 Enjoy and serve.
