Coconut Banana Pancakes

Coconut banana pancakes are a great option for breakfast or an evening snack that you can make and enjoy with your family and friends. For 12 to 15 pancakes:

    • 1 ½ cups all-purpose flour (maida)
    • 1 tablespoon white sugar (powdered)
    • 2 ¾ teaspoons baking powder
    • 1 teaspoon salt
    • 1 ¼ cups milk
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 very ripe banana, mashed
    • 2 tablespoons butter, melted or as required
    • 1 teaspoon vegetable oil, or as needed

For Syrup:

    • 1 cup white sugar (preferably powdered) for easy mix
  • ¾ cup buttermilk
  • 7 tablespoons butter
  • 1 teaspoon coconut extract
  • ½ teaspoon baking soda


    1. In a mixing bowl, you should start by combining flour, 1 tablespoon white sugar, baking powder, and salt.
    2. In a separate cup, you need to whisk together milk, egg, and vanilla extract until smooth and creamy. Stir the milk mixture into the flour mixture until it is fully combined.
    1. In a mixing bowl, beat the ripe banana with an electric mixer until smooth and creamy; fold the creamed banana into the batter.
    2. In a separate bowl, melt the butter and stir it into the batter. Allow the batterto sit in the refrigerator for 10 minutes.
    3. In a pan, heat the oil over medium heat. Then start by dropping the batter by large spoonfuls into the hot oil.
    4. Cook until bubbles form and the edges are dry, it will take 3 to 5 minutes.
    5. Cook for 3 to 5 minutes on the other side too, until browned. Continue the same work with the remaining batter.

  1. In order to make the syrup, in a saucepan over medium heat, dissolve 1 cup white sugar, buttermilk, and butter until sugar is dissolved if you have taken powdered sugar it will take less time to dissolve.
  2. Bring it to a boil for 1 minute, then reduce heat to low and stir in the coconut extract and baking soda. Cook for 1 to 2 minutes, or until the baking soda is fully dissolved.
