Ingredients required for Mexican bun recipe:
FOR THE BUN:
500 g (17 oz.) coconut Flour
90g ¾ cup Golden flaxseed(must be powdery)
3 tablespoons Psyllium husk(must be powdery)
80 g (3 oz.) erythritol powder
9 g Salt
10 g (0.5 oz.) Dry Yeast
60 g (2 oz.) Butter
280 ml Water + 1 large Egg
TOPPING:
200 g (7 oz.) Butter
150 g (5 oz.) erythritol powder
3 Large Eggs, Lightly Beaten
200 g (7 oz.) Cake Flour
1 tablespoon Instant Coffee
FILLING:
100 g (3.5 oz.) Butter
How to prepare Mexican coffee bun recipe:
Bun preparing method: rock cakes
1 Take a large bowl and add coconut Flour, Golden flaxseed, Psyllium husk, erythritol powder, Salt, Dry Yeast, Butter 280 ml Water + 1 large beaten Egg and whisk them properly till well combined or till the dough should be able to stretch without breaking.
2 Now cover the dough with a cloth and leave it for around half an hour or till the dough has doubled in size.
3 Now we have to prepare toppings.
Toppings method:
1 Take a small bowl and add butter and erythritol powder and mix well till it looks pale in colour.
2 Now add beaten eggs.
3 slowly fold it in flour.
4 Now add coffee mixture and set it aside.
To Make Bun:
1 Remove the cloth from the dough and punch down the dough to release the air.
2 Divide the dough into parts.
3 Now roll the dough into a circle shape and insert half a tablespoon of butter into each shape and wrap it up.
4 Now leave the ready bun for around 30 minutes or double in size.
5 Place it on a baking sheet and grease sheet with butter or cooking spray.
6 Bake at 200°C (400°F) or till the toothpick comes out clean.
7 Serve and eat
