One large bunch of scallions diced, about one cup

1    The first step is to preheat the oven to 400 degrees Fahrenheit. Next, place the chicken breasts between two pieces of parchment paper and pound them with a mallet until they are roughly half an inch thick.

2   Once the chicken has been pounded, remove the top piece of parchment paper and season both sides of each breast with salt and pepper. Place the chicken into a baking dish and bake for 15 minutes. Remove from the oven and flip the chicken over. Bake for another 10 minutes. Remove from the heat and allow the chicken to cool completely before slicing.
