3 Eggs Whisked
2 Tbsp. Stevia Powder
2–3 Carrots (200 G) Shredded Or Finely Chopped
2 Tips. Vanilla Extract
1 cup Almond Flour
2 tbsps. Flax Meal
1/4 Cup Shredded Coconut
1/2 Cup Walnuts
3/4 Cup Ghee Or Coconut Oil
2 tsps. Baking Powder
1/2 tsps. Baking Soda
2 tsps. Cinnamon Powder
1 tsp. Ginger Powder
One tbsp. Apple Cider Vinegar
1 Dash Nutmeg
1 Dash Of Salt
For Frosting-8 Oz Cream Cheese –
For Frosting -2 tsps. Stevia (Optional)
For Frosting-1/2 tsp. Vanilla Extract (Optional)
How to prepare homemade carrot cake cupcakes :
1 In the first step, preheat your oven to 350 degrees.
2, Take a large bowl and add all the dry ingredients except the carrots.
3 Grate the carrots & take a blender or food processor&add all cupcake ingredients and blend it till becomes puree.
4 Now, take a cupcakes pan and pour it into it.
5 Bake it for 15 to 20 minutes or till it is cooked well or till the toothpick comes out clean.
6 To make frosting take a pan & add cream cheese and stevia & vanilla in high heat and mix well till well combined.
7 Let it cool the cupcakes before baking & spread cream cheese on the top & sprinkle carrot shreds and walnuts.
8 Your easy carrot cake are ready to serve.
