Ingredients required for Keto Cinnamon Blueberry Fritters:
1/2 cup almond flour
2 T coconut flour
1/2 t baking soda
1 t cinnamon
1/4 cup almond milk
1 t vanilla extract
1/4 cup coconut oil + 1 T, divided
1/2 cup fresh blueberries
How to prepare Keto Cinnamon Blueberry Fritters:
1 Firstly preheat your oven to 350°F.
2 Take a baking sheet and add parchment paper to it.
3 Take a large bowl and add beaten eggs, almond milk, vanilla extract, and ¼ cup of coconut oil into the dry ingredients.
4 Stir well in most of the blueberries; put aside a handful for later.
5 Continue mixing it till semi-firm dough forms.
6 Now Make the dough into 4 fritter patties and put blueberries on top.
7 Drizzle coconut oil to crisp the edges and tops.
8 Bake it for 10 to15 minutes at least and then remove it from the oven and let it cool fully.
9 Serve and enjoy this delicious recipe.
