Ingredients required for Pepper Jack Chicken Taquitos Recipes :

    3 cups shredded chicken or rotisserie chicken

    2 cups chopped spinach

   1/3 cup sour cream

   8 low carb tortillas

  8 ounces cream cheese, softened

 2 cups shredded Mexican blend cheese (cheddar cheese, jack cheese)

 1/4 cup salsa

 Avocado oil for frying (or olive oil)

How to prepare low-carb chicken taquitos:

1     Take a skillet over medium-high heat and add avocado oil to it.

2    Add enough avocado oil to cover at least half-wrapped avocado.

3    Take a bowl and add shredded chicken, cream cheese, spinach, shredded cheese, sour cream and salsa and mix all the ingredients till well combined.

4    Now we have to add 1/3 cup of filling into the tortilla.

5    Now roll the tortilla around the filling.

6    Fry these tortillas from both sides or till they turn golden brown.

7    Now remove these Taquitos from the pan and place them on a paper towel to dry.

8    Serve it with sour cream and enjoy!
