  • ½ cup olive oil
  • 1 (4 oz.) white onion, minced
  • 2 garlic cloves, minced
  • 2 fresh jalapeños, minced
  • 2 cups (1 lb) crushed tomatoes
  • 2 tsp. salt, or to taste
  • 1 tsp. pepper, or to taste
  • 8 eggs

How to prepare rancheros huevos:


    • Take a saucepan over medium-high heat and add three spoons of oil to a saucepan. Now add the jalapeños and cook till they become delicate. And add the garlic and onion stir and cook till it becomes semi-transparent.
    • Now in low heat add crushed tomatoes and cover the pan till the tomatoes are cooked well or till it becomes a thick sauce.
    • Add salt and pepper accordingly and remove it from the heat.
    • Heat up the remaining oil over medium heat and add egg to fry or till the egg has a crunchy and crispy edge.
