Ingredients required for Keto Chicken Pesto Recipe:

    1 head of Cauliflower (cut into florets)

    1 tbsp. olive oil

   One lb. shredded chicken (cooked)*

   3/4 cup basil pesto

   1/4 cup Heavy cream (or coconut cream)

  1 cup Mozzarella cheese (shredded, divided)

  Sea salt

  Black pepper

  Fresh basil (cut into ribbons for garnish – optional)

How to prepare Keto Pesto Casserole:

1    Firstly we have to preheat our oven to 200 degrees C.

2    Take a casserole dish and grease it with melted butter.

3   Then toss the cauliflower with olive oil and sprinkle sea salt and black pepper.

4   Then roast it for 15 to 20 minutes or till it turns crispy and tender.

5   Then reduce oven temperature to 180C.

6   Take the pan and add shredded chicken and half mozzarella cheese into the pan with the cauliflower.

7    Then stir together basil pesto and cream and pour into the casserole and mix it well to tills well combined.

8   And top with mozzarella cheese on top.

9   Return the casserole dish to the oven and bake it for 10 to 15 minutes or till the cheese is melted well.

10   Serve and garnish with basil.
