veggie spring rolls  Homemade low carb vegan mozzarella spring rolls are my favourite snacks.

I made them in oven baked spring rolls. Less oily and they are very crispy. They were very tasty and they are freezer friendly.

If you have not tried them yet, you are missing out! These really delicious baked mozzarella vegan spring roll wrappers bites are worth every single bite. Don not forgets the sweet sauce for dipping. Here is how to make extra crispy and delicious party spring rolls.

Crispy outside and so tender inside, you will love them. Best of all they can be customized with your choice of ground chicken, turkey or pork.


Ingredients required for Low carb crispy vegan mozzarella spring rolls:



  • 1 avocado cut into chunks
  • 3 spring onions finely chopped
  • 2 sun dried tomatoes chopped
  • 1 tablespoon lime juice
  • ¼ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • half teaspoon salt
  • ½ teaspoon black pepper


  • 5 coconut wraps

How to prepare Low carb crispy vegan mozzarella spring rolls:

    1. Take a large bowl and add the chopped avocado, spring onions, sundried tomatoes, lime juice, garlic powder, cayenne pepper, salt and pepper and mash them slightly.
    2. Take a coconut wrap and dip your fingers in water and rub the edges of the wrapper. When you rolled them it will help to make it stick.


  1. Now with the help of scoop place 2 tablespoons of filling and press down to the bottom corner.
  2. Then  fold the corner into roll shape.
  3. Now, take a baking sheet and put these rolls into the sheet and grease them with cooking spray.
  4. then  bake them at 190C/370F degrees for 10 minutes or till they cooked well.
  5. Serve with keto sauce.
