To make these low-carb zucchinis, you’ll first need to prepare the crust. Start by preheating the oven to 400 degrees F and spreading the shredded mozzarella and parmesan cheese onto two pieces of bread. Next, spread the garlic powder, onion powder and Italian seasoning onto the other piece of bread. Once everything has cooled slightly, crumble the bread into crumbs. Finally, beat the eggs in a medium-sized bowl.

2 large zucchini, sliced thin rounds
1 cup marinara sauce
5 oz. salami or pepperoni (optional)
16 oz. shredded mozzarella
dried oregano + chilli pepper flakes
How to prepare Low Carb Zucchini Pizza Stacks:
Preheat oven to 400 degrees F.
Take a muffin pan and spray it with olive oil.
We have to stack in the slots, firstly zucchini then slather on about 1 tablespoon of sauce.
If you are using salami slice and top it with cheese.
I have created three layers of zucchini and spread sauce on each one of them and top with cheese.
We can add sneak-in salami or sliced turkey in between.
Top with oregano and chilli flakes.
Bake it for 15 to 20 minutes only or till it looks golden brown on top or till the toothpick comes out clean.
