Ingredients required for Keto Birria Quesadillas recipe:

    1 tbsp. extra-virgin olive oil

   1 bell pepper, sliced

   1/2 yellow onion, sliced

   1/2 tsp. chilli powder



   Kosher salt

   Freshly ground black pepper

  3 c. shredded Monterey Jack

  3 c. shredded cheddar

  4 c. shredded chicken 
  1 avocado, thinly sliced

  1 green onion, thinly sliced




  Sour cream, for serving

How to prepare Birria Tacos Quesadilla

 

1   Firstly we have to preheat our oven to 200C and line two baking sheets with parchment paper and grease it with melted butter.

2   Take a skillet over medium-high heat and add oil.

3   When heated up the oil add pepper and onion and add salt, pepper and chilli powder cook it for 4 to 5 minutes and move to the plate.



4   Take a bowl and add cheese and stir well and spread cheese into prepared baking sheets.

5   Spread into the shape of a circle and into the size of a flour tortilla.

6   Bake cheese for 7 to 8 minutes and add onion-pepper mixture, shredded chicken and avocado slices.

7   Let it cool and then lift up the parchment paper and fold one side of the cheese “tortilla” over the side with the fillings.




8   Place it in the oven to heat for 3 to 4 minutes.

9   Repeat the process and make 2 more quesadillas.

10  Slice the quesadillas and garnish with sour cream before servings.
