Ingredients required for Keto Ice-Cream Sandwiches:

Ice cream

   1½ cups heavy whipping cream

   1 cup unsweetened almond milk

  5large eggs yolks

  ½ cup (3¾ oz.)xylitol

  2 tsp vanilla extract

  ½ tsp salt

Chocolate chip cookies with pecans

   1 cup (4 oz.)almond flour

   ¼ tsp baking soda

   ¼ tsp cream of tartar or lemon juice (optional)

   ¼ tsp salt

   13 cup (2½ oz.) erythritol

   2½ oz. unsalted butter softened

  1 large egg

  One tsp vanilla extract

  1 oz. pecans, chopped

  1 oz. (313tbsp) sugar-free baking chocolate chips

 

How to prepare Keto Ice-Cream Sandwiches:

Vanilla ice cream:

1   Take the saucepan on low high heat add the cream, almond milk and whisk well for 4 to 5 minutes.

2   Then add egg yolks and whipped well.

3   We have to continue whisking till the mixture thickens.

4   Then add the sweetener to the cream mixture and mix well it melted fully.

5   Take this mixture into the fridge and freeze it till it freezes fully.

 

Chocolate chip cookies with pecans:

1.   Take a bowl and add almond flour, baking soda, cream of tartar, and salt and stir well.

2.   Then take a large bowl and we have to add the granulated sweetener and melted butter in it and stir well.

3.   Then add beaten eggs and vanilla and stir well till well combined.

4.   Then we have to add the dry ingredients and mix well.

5.   Now add chocolate chips and pecans and blend them with an electric mixer till it blends fully.

6.  We have to place this dough between parchment paper shape the dough into diameter and keep this dough in the refrigerator for 4 to 5 hours.

7.    Preheat oven to 200C.

8.  Take a baking sheet add parchment paper to it and grease it with melted butter.

9.  Cut the dough into slices place it on a baking sheet and with your fingers flatten it.

10.    Bake it for 7 to 10 minutes or till it looks golden brown in colour.

11    Allow them to cool fully.

Final Step:

1.        We have to upside downturn half of the cookies.

2.        Then spread ice cream into the cookies.

3.        Top with ice Ceram and gently press down cookies.

4.        Serve and enjoy!
