These warm and gooey pudding cakes are on top of my favourite desserts. This lemon pudding cookies recipe is very tasty. It is easy for meal preparation breakfast. It is definitely one of my all-time favourite healthy breakfast treats. This recipe comes together in about 5 minutes.

 

It makes a tangy, refreshing dessert or breakfast that works for those who eat keto or low-carb. It is a delicious healthy dish and a very easy recipe to make.

Ingredients required for Keto Lemon Pudding:

   1/2 cup granulated low- or zero-carb sweetener of choice (see notes)

   2 tablespoons softened butter (see notes)

   2 large Pete and Gerry’s Organic Eggs, whites and yolks separated, at room temperature

   3 tablespoons almond flour

   2 teaspoons freshly grated lemon zest

   1/4 teaspoon salt

   1/3 cup fresh lemon juice

   1/3 cup heavy cream

   1/8 teaspoon cream of tartar

    Powdered low- or zero-carb sweetener of choice for sprinkling

How to prepare baked lemon pudding:

1    Firstly, preheat your oven to 220C.

2    Then we have to grease 7-ounce ramekins.

3     Take baking dishes and set them aside.

4     Take a large bowl add granulated sweetener, and butter and mix together till well combined.

5     Then add egg yolks, almond flour, lemon zest, and salt and stir lemon juice and cream and mix well till well combined and set them aside.

6     In another bowl beat egg whites with cream of tartar till stiff peaks form.

7     Then carefully fold the two mixtures together.

8     And divide the batter into prepared ramekins.

9     Bake it for around 30 to 35 minutes till pudding cakes look golden brown in colour.

10   Remove from the oven and let it cool fully.

11    And dust them with powdered sweetener and enjoy warm.
