Ingredients required for Low-carb Christmas pudding recipe:
100 g / 1 cup almond flour
One egg
100 g / ½ cup shredded carrot
50 g / ¼ cup blueberries, frozen
50 g / ¼ cup cherries frozen
10 g small handful crushed walnuts
2 tbsps. Butter melted
1 tbsp. double heavy cream
One tsp. baking powder
1 tsp. cocoa powder unsweetened
2 tbsp. powdered sweetener or more to taste
Two tsp. mixed spice pumpkin spice
2 tsp. cinnamon
Orange zest from ½ orange
Optional: glug of brandy
Double heavy cream, to serve
How to prepare a Low-carb Christmas pudding recipe:
1 Firstly we have to grate the carrot and then chop the fruits I used blueberries and cranberries.
2 Mix well grated and chopped fruits well and it should be 1 US measuring cup.
3 Take a bowl and add all the dry ingredients.
4 Take a pan over medium-high heat and melt the butter in it.
5 Take a large bowl and add all the remaining ingredients and add melted butter and mix well till well combined.
6 Now we have to grease the Pyrex glass bowl with melted butter and pour the Christmas pudding batter.
7 We have to microwave it 700W for 5 to 6 minutes only.
8 Allow them to cool fully and turn upside down on a plate and serve with cream.
