Ingredients required for Keto Chicken Pot Pie Biscuits:
FOR THE POT PIE:
3.5 pounds chicken thighs bone & skin on
1 large yellow onion chopped
4 medium-sized carrots diced
4 stalks of celery diced
10 ounces cremini mushrooms sliced
½ teaspoon dried thyme
3 cloves garlic minced
½ cup frozen peas
1-2 cups low sodium chicken broth
2 tablespoons cornstarch
Olive oil
Kosher salt
Fresh cracked pepper
FOR THE BISCUITS:
2 cups almond flour
2 teaspoons baking powder
½ teaspoon each garlic & onion powder
¾ teaspoon kosher salt
Fresh cracked pepper
2 eggs beaten
½ cup melted coconut oil or butter
½ cup low-fat shredded cheddar cheese
How to prepare Keto Chicken Pot Pie Biscuits:
1 To make the pot pie, preheat your oven to 400 degrees F.
2 We have to allow the chicken thighs to come to room temperature for 15 to 20 minutes and we have to season both sides with a pinch of salt and pepper powder.
3 Now take a sheet tray and grease it with melted butter and we have to cook the chicken in the oven for 1 hour.
4 When our chicken is ready allow it to cool for 5 to 10 minutes and then we have to remove the chicken skin.
5 With the help of a knife chop the chicken into small chunks.
6 Now take a large wide pot over medium-high heat and add one tablespoon of oil.
7 Now add the chopped onions, carrots, celery, mushrooms, dried thyme, ¾ teaspoon of salt, and a few cracks of pepper.
8 Stir well and cook it for 5 to 10 minutes.
9 Now add chopped garlic and stir well till veggies cook well.
10 Now add the shredded chicken to the pot and the frozen peas and add 2 cups of chicken stock to the pot and cook for 10 minutes.
11 Take a bowl and add cornstarch with 3 tablespoons of chicken broth and mix well till well combined.
12 Now add corn starch mixture into the pot and cook it for 5 minutes.
13 Turn off the heat and set it aside.
For the biscuits:
1 We have to preheat the oven to 350 degrees F.
2 Take a bowl and add 2 cups of almond flour, Add the salt, pepper, onion and garlic powder, baking powder, and mix well till well combined.
3 Take a small bowl and add beaten eggs and add melted oil and mix well.
4 Now pour the wet batter into the dry batter and stir well.
5 Now add shredded cheese and mix well and make a soft dough.
6 Take a baking sheet and add parchment paper and grease it with melted butter with the help of a scoop make equal size round biscuits and put these biscuits on the sheet and a little press with your fingers.
7 Now bake it for 10-15 minutes till it looks golden brown.
8 Serve and enjoy!
9 You can store these biscuits in an airtight container for a month.
