Ingredients Required for Homemade Blueberry Biscuits:

  • 6 ounces fresh or frozen blueberries
  • 1 and ½ cups of finely milled almond flour
  • ½ cup of coconut flour
  • ¼ cup of granulated sugar substitute

  • ½ cup of full-fat sour cream
  • 4 tablespoons of unsalted melted butter
  • 3 eggs
  • 1 ½ teaspoons of baking powder
  • ¼ teaspoon of sea salt



  • 1/2 teaspoon of lemon extract

Keto Lemon Icing Homemade Blueberry Biscuits:

  • ½ cup of confectioners’ sugar substitute
  • 2 tablespoons of fresh lemon juice



  • 1/2 teaspoon of lemon extract
  • 1-2 tablespoons of heavy whipping cream

How to prepare Sweet Blueberry Biscuits:

1. Firstly we have to preheat our oven to 180C.

2. Take an iron skillet or grease it with melted butter and line a baking sheet with parchment paper on it.

3. Melt butter and leave it to cool down.

4. Take an electric mixer and add sugar substitute, cooled melted butter, lemon extract and the beaten eggs and mix well till well combined.

5. Then add the sour cream and mix well till well combined.



6. Then we have to add almond flour, coconut flour, baking powder and salt and stir well till well combined.

7. Then add fresh or frozen blueberries and pour the batter with the help of a spoon into the skillet or baking sheet.

8. If you are making 5 large biscuits bake it for 20 to 25 minutes or till the toothpick comes out clean.



9. Allow biscuits to cool down for 5 to 7 minutes and drizzle lemon icing on top.
