Ingredients required for Keto Boston Cream Cookie Bites:

KETO COOKIE CUPS

     1 3/4 cup almond flour

    1/2 cup granular sugar substitute

    1/2 tsp. baking powder

    1/4 tsp. salt

    1/4 cup butter, melted

    1 large egg white

   1/2 tsp. vanilla extract

 

KETO CREAM PIE FILLING

     3/4 cup whipping cream

     2 large egg yolks

    6 tbsp. confectioner sugar substitute

    pinch salt

    1 1/2 tbsps. butter, cut into two pieces

    1/2 tsp. vanilla extract

   1/4 tsp. glucomannan or xanthan gum

SUGAR-FREE CHOCOLATE GLAZE

   2 Oz. sugar-free dark chocolate chips

   1 tbsp. butter

 How to Prepare Keto Boston Cream Cookie Bites:

 1     Firstly we have to preheat our oven to 325 degrees F.

2     Take a muffin pan with 20 silicone liners.

3     Take a large bowl and add almond flour, sweetener, baking powder, and salt and mix well till well combined.

4     Then add melted butter, beaten egg white, and vanilla extract and mix well till smooth dough forms.

5     Then with your hands roll the dough into 1 inch balls and press into the bottom and up the sides of the prepared mini muffin cups.

6    Bake it for 15 to 20 minutes or till the edges turn golden brown.

7     Remove from the oven and allow it to cool for 8 to 10 minutes.

 

KETO CREAM PIE FILLING:

1     Take a saucepan over medium-high heat and add the whipping cream then keep the flame simmering.

2     Take a bowl and add egg yolks and sweetener and salt and mix it well tills well combined.

3   Then gently pour half of the hot cream into the yolks to temper.

4    Then carefully add back yolk and cream mixture into the saucepan and cook it more till it thickens.

5    Remove it from the heat and add butter and vanilla extract.



6    Leave this mixture to cool at room temperature.

7    Then with the help of a spoon fill it into the cookie cups and refrigerate these cups for 20 to 25 minutes.

 

SUGAR-FREE CHOCOLATE GLAZE:

1     Take saucepan over low heat and then add keto-friendly chocolate chips and butter.

2    Stir it well till it melted smooth and then trickle over the tops of the cookie cups.

3    On the other hand, you have to melt the butter and chocolate in the microwave for 30 seconds till it turns smooth.

4    Then refrigerate it for 10 minutes to set the chocolate.
